Introduction

Ingredients

    12 ounces thawed Mahi-Mahi (cooks up 9 ounces)
    1/2 cup fresh pineapple chunks
    1/2 cup fresh salsa from the produce department
    1 tsp cornstarch
    1 tsp prepared horseradish
    1/2 tsp honey
    1/2 tsp brown mustard
    juice of 1/4 lemon
    1/2 tsp black pepper
    2 cloves of garlic
    cooking spray (like PAM)

Tips

Serve fish and sauce over prepared brown rice. Broccoli is a good complimentary vegetable. (Rice and broccoli not included in the nutritional information)


Directions

*Chop pineapple into small pieces; combine with salsa, cornstarch, horseradish, honey and mustard.
*Coat both sides of fish with cooking spray, sprinkle with pepper and squeeze on lemon juice
*Preheat large saute pan on medium-high. Saute garlic cloves for 2 minutes. Cook fish 3 minutes; turn and add salsa. Cover, reduce to medium, and simmer 5-6 minutes or until flesh is opaque and separates easily with fork.
