Ingredients

1 package refrigerated tortellini (approx. 700 gr)
2 pints grape tomatoes, halved
1 bunch of fresh basil leaves
2 tsp garlic
1 medium onion, sliced
1 small can sliced black olives, drained
1 tbsp balsamic vinegar
2 tbsp olive oil
1/2 cooked chicken breast (1 filet), cubed
1/2 cup grated parmesan cheese
cooking spray
salt and pepper to taste
Tips
Any fresh vegetable is a good addition for this dish. Sweet pepper strips, cooked peas, carrot strips add color and variation to this meal.
Try substituting grape tomatoes with sun-dried tomatoes.
Directions
- Cook tortellini according to package directions. Drain well.
- Coat a deep pan or wok with cooking spray and bring it over high heat.
- Toss in the garlic, onions, tomatoes and olives. Sautee for 3-4 minutes.
- Add the drained tortellini, chicken and basil leaves. Add balsamic vinegar, olive oil, salt and pepper, and toss to coat until all ingredients are heated through.
- Remove from heat. Sprinkle with parmesan cheese and toss to coat.
- Serve warm. Enjoy!
