    1 3/4 cups all-purpose flour
    3 tablespoons brown sugar
    2 1/4 teaspoons baking powder
    1/2 teaspoon salt
    1/2 teaspoon cinnamon
    1/2 cup raisins
    1 egg
    1 very ripe banana, mashed
    1/4 cup fat-free milk


Easy filling idea for breakfast or a snack.


Pre heat oven to 350F, spray a loaf pan with Pam or other non stick spray. In a mixing bowl combine the flour, sugar, salt, cinnamon and baking powder then add the raisins. In a small bowl beat the egg, then add the mashed banana and then the milk. Pour over the flour mixture and mix until blended. Pour into prepared loaf pan. Bake for approximately 1 hour. Remove from oven and cool.
