Ingredients

Marinade:
1/3 cup red cooking wine
1/4 cup Balsamic vinegar
2 Tbsp cherry preserves (Bonne Maman is great!)
2 cloves garlic, minced
1/2 tsp salt
dash of black pepper
1.5 lbs London Broil, trimmed
1 Tbsp olive oil
2 tsp butter
*Finely chopped green onion, optional
Directions
Place london broil in a marinade container or gallon size freezer bag. Whisk all marinade ingredients together and pour over meat. Marinade at least 30 minutes (up to 8 hours).
Remove meat from marinade. Pour marinade in small sauce pan. Bring liquid to a boil, then cook over medium until it has reduced to approx. 1/2 cup. (If using green onion, add it while liquid is reducing.)
While sauce is cooking-
Brush grill pan with olive oil and heat to medium-high. Grill meat 8 to 10 minutes per side depending on thickness. (Meat may start to appear to be burning; this just forms a tasty crust.) Remove from heat and allow to rest for 5 minutes before slicing.
Add butter to reduced sauce. Whisk until thoroughly melted. Drizzle finished sauce over london broil and serve!
