    1 low-carb low-fat tortilla
    4 oz. shredded cooked chicken breast, divided
    2 tbsp black bean and corn salsa
    1/4 cup onions
    1/4 cup bell pepper
    1/2 cup enchilada sauce, divided
    1/4 cup fat-free cheddar cheese, divided
    Optional: green onions, fat-free sour cream - but be sure to add in the extra calories!


Preheat oven to 400 degrees. In a pan sprayed with nonstick spray, cook onions and pepper over medium heat until tendercrisp (about 2 minutes). Remove from heat; set aside

In a small dish, combine the onions and peppers with the salsa, chicken, half the sauce, and half the cheese. Mix well. Spray a small baking dish with nonstick spray. Heat tortilla in the microwave until slightly warm. Lay the tortilla on a clean, dry surface, and then spoon the mixture into your tortilla.

Wrap the tortilla up tightly, and place them in the baking dish seam side down. Pour the rest of the enchilada sauce over the enchilada and bake in the oven for about 10 minutes, or until the enchilada is hot. Sprinkle the rest of the cheese over the enchilada, and then return it to the oven until the cheese has melted (about 5 minutes). Top with optional ingredients if you wish but don't forget to add in extra calories if you do. Enjoy!
