    Sweet potato, cooked, baked in skin, without salt, 2 medium (2" dia, 5" long, raw) (remove)
    Egg substitute, liquid (Egg Beaters), .5 cup (remove)
    Parmesan Cheese, shredded, 16 tbsp (remove)
    Rosemary, dried, .5 tsp (remove)
    Pepper, black, .25 tbsp (remove)


Side of Smokey Yogurt Dip.
1 C plain greek yogurt
1/4 t garlic powder
1/4 t smoked paprika (or spanich paprika. Same thing)
1/4 t cumin.


Preheat oven to 425. Set wire rack on top of baking sheet. Spray rack with nonstick spray.

Peal sweet potatoes.

Grate sweet potatoes and then squeeze the moisture from them. The more moisture you remove, the crispier they get in the oven.

In the grated sweet potatoes, add the egg substitute, cheese, pepper, and rosemary. Mix until combined.

Scoop out potato mixture and set on wire rack.

Press sweet potato mixture as thin as possible. repeat until potatoes are gone.

Bake for 25-30 minutes or until potatoes are dark around the edges and crispy.
