Ingredients

    2 frozen salmon filets (about 12 oz total)

    1/4 red bell pepper chopped
    1 small carrot chopped
    2 green onions chopped (white and green parts)
    1 clove garlic chopped
    1/4" grated ginger root
    Salt and pepper to taste
    3/4 sleeve of saltine-style crackers
    1/4 C Fage 0% plain Greek yogurt
    2 TBSP egg whites
    1 TBSP siracha (Asian hot sauce)

Tips

I poach frozen salmon filets and let them cool while I cut up the veggies. These are also very good served with a dipping sauce of 2Tbsp. plain Greek yogurt, 2 tsp mayo, 1 tsp. siracha, juice of 1/2 a lemon, pinch of grated ginger and a pinch of garlic powder.


Directions

Cut all veggies as small as possible. Stir cut veggies and salt and pepper into poached salmon. Mix in cracker crumbs. Add Greek yogurt, siracha, soy sauce,and egg substitute (or egg whites). Use a 1/4 cup measuring cup to portion out patties and brown in a skillet (I use an orgreenic pan so I don't need oil).

Serving Size: 1/4 C ea patty makes 12 servings
