Number of Servings: 4


    egg white, fresh, 8 large
    Egg, fresh, 2 large
    Green Peppers (bell peppers), 0.5 cup, chopped
    Onions, raw, 1 cup, chopped
    *Zuccini - medium, chopped
    Red Ripe Tomatoes, 2 Italian tomato chopped
    Mushrooms, fresh, 1 cup,chopped or sliced
    *Canola Oil, 1 1tsp
    salt and pepper to taste


heat oil on medium high heat add mushrooms saute till browned add onion and peppers saute till onions are translucent. add zuccini and saute 3 minutes season with salt and pepper. Add tomatoes and cook 1 minute more make a well in the middle of the veggies and add the beaten egg and eggwhites stir till set and mix in to the veggies.
