Ingredients

    1 rotisserie chicken
    3 tsp canola or olive oil
    1 large onion, chopped
    2 medium carrots, chopped
    2 medium stalks of celery, chopped
    2 small zucchini squash, chopped
    2 garlic cloves, minced
    14.5 oz can of diced tomatoes (with chiles optional)
    1/2 tsp ancho chili pepper
    1 tsp chili powder
    1 1/2 tsp cumin seed, ground
    4-6 cups of chicken broth
    cilantro to taste

    optional: pinto beans, black beans and/or corn kernels
    optional toppings: tortilla chips, reduced fat cheddar cheese, finely chopped scallions
