Ingredients

    1 1/2 cups unbleached flour
    3/4 cup Bob's Red Mill Flax meal
    3/4 cup oat bran
    3/4 cup brown sugar
    2 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    2 tsp cinnamon
    2 apples, shredded
    1 1/2 cup shredded carrots
    1/2 cup raisins
    1 cup chopped nuts
    2/3 cup milk
    2 eggs, beaten
    1 tsp vanilla

Directions

Mix together dry ingredients. Stir in apples, carrots, raisins and nuts. Combine milk, eggs & vanilla and stir into mix. Do not overmix. Fill muffin tins 1/3 full. Bake at 350 degrees for 20 minutes.
