    1/4 cup olive oil
    1 lg onion chopped
    4 tsp garlic minced or chopped
    4 lg potatoes shredded
    1/2 tsp pepper divided
    1/2 lb tofu (half of a block)
    2 Tbsp soy sauce low sodium


Preheat oven to 400 degrees
In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, saute for 2-3 minutes.
Increase the heat to med-high and add potatoes, and 1/4 tsp of the pepper. Cook for 10-15 minutes, flipping the potatoes regularly till they are well browned.
Blend the remaining pepper, tofu and soy sauce in a food processor till creamy.
Pour creamy mixture over the fried potatoes and mix to "coat". Pour this mixture into a large oiled baking pan.
Bake for 30-40 minutes to till firm.
Allow to cool for @ 10 minutes.
