    1 tbs olive
    2 cups leeks, chopped
    2 tsp. whole wheat flour
    2 cups chicken broth
    2 cups water
    3 cups squash puree
    1/2 tsp minced garlic
    1/2 can black beans
    1/2 tsp ground cumin
    1/4 tsp salt
    1/4 tsp ground white pepper
    dusting of grated nutmeg


Carmelize leeks in olive oil in large pot over medium heat.
Sprinkle with flour and cook, stirring 2 minutes or until mixture is slightly thickened. Add broth, whisking, then squash, garlic, cumin, salt and pepper. Bring the soup to a simmer, whisking occasionally and cook 15 minutes, stirring occasionally to prevent scorching. Add beans and cook 15 minutes, stirring occasionally
