    1 cup quinoa
    2 large sweet potatoes
    3 cups kale chopped
    1/2 red onion diced
    1/2 cup dried cranberries
    5 Tbsp. balsamic vinegar
    1 Tbsp. olive oil


Dice sweet potatoes & toss with onion, olive oil, salt & pepper. Bake at 425 for 30 minutes. Drizzle kale with 2 Tbsp. of balsamic, salt & pepper. Massage into kale. Bake at 425 for 15 minutes. Cook quinoa in water. When all is cooked, combine in a large bowl & drizzle with remaining balsamic. Serve warm or cold.
