Number of Servings: 3


    1 tsp crushed fennel seed
    1 tsp black pepper
    1 tsp garlic chopped or minced
    2 Tbsp olive oil
    4 cups Vegetable broth low sodium (or water)
    2 pounds leeks trimmed, cleaned, sliced)
    2 pounds potatoes cleaned and diced
    1 cup unsweetened almond milk


serve chives, onions, salsa etc.....


Heat olive oil in large sauce pan
Add garlic, fennel and pepper.
Add leeks and potatoes, stir scraping the bottom of the pan.
Add broth. Bring to a boil, cover then turn heat down and simmer @ 40 minutes
Using a potato masher, mash the potatoes, stir and add up to one cup of milk - to desired consistency.
