    1 can black beans
    6 strips, red bell pepper
    6 strips, yellow bell pepper
    2 thin slices, sweet onion
    1 garlic clove
    3 c. iceberg lettuce, shredded
    1/2 c. monterey cheese, shredded
    1 c. tomato, chopped
    24 Tostitos Bite-Size Chips
    1 Salsa Snack recipe (1/2 c. tomatoes, 1/2 c. yellow and red pepper, 1 ring red onion, 1 garlic clove. Chop in food processor. Refrigerate)


Make black beans ahead, refrigerate and reheat prior to making salad. Use leftover beans for other recipes using black beans.


Empty canned beans into small saucepan. Add garlic, onion, and peppers. Cook over low to med-low heat for an hour, stirring occasionally. You may need to add water a little at a time for desired consistency.

Meanwhile, in two bowls, put 1/2 c. in each of Salsa Snack recipe. Top with lettuce, tomatoes, cheese, and black beans when cooked. Crush tortilla chips and top salad with them.
