Introduction

Great base for any chicken soup - add more vegetables, more chopped chicken pieces, rice, noodles, etc. to taste. Great base for any chicken soup - add more vegetables, more chopped chicken pieces, rice, noodles, etc. to taste.

Ingredients

    2 cups chopped carrots
    2 cups chopped celery
    2 cups chopped onion
    1 leftover chicken carcass
    2 tbsp thyme
    2 tbsp sage
    1 tbsp Weber's Kick'n Chicken spice
    2 tbsp olive oil

Tips

Store frozen in 1-cup servings, add 1/2 cup frozen mixed vegetables and 1/2 cup rice, noodles, white beans, or what have you to make it a more robust, filling soup. Experiment!


Directions

Put olive oil in bottom of crock pot. Add all other ingredients, plus one leftover roast chicken carcass. Add 12 cups water. (Recipe is calculated with broth instead of carcass - guess what is not in the database?)

Cook on "high" for 4 hours. Scoop out bones, let cool. Pick off and add back any meat that remains on the bones. Be careful to separate any gristle.
