Ingredients

Beef:
1 4- to 5-pound trimmed whole beef tenderloin,
2 teaspoons coarse salt.
3 tbls Black Pepper
Sauce:
4 tablespoons (1/2 stick) unsalted butter.
1/4 cup finely chopped shallots
3 tablespoons Blackberry brandy
1 fresh rosemary sprig
1 teaspoon coarsely cracked black pepper
1 cup Red Wine
2 tbls Black Pepper
Tips
Sauce can be made ahead of time.
Directions
Salt tenderloin 24 hours in advance. Place in fridge, let stand for one hour before cooking.
Melt 2 tbls butter in a sauce pan. Combine shallots & brandy. Cook until liquid evaoporates, then combine red wine, rosemary, and black pepper. Simmer for 5 minutes, then set aside.
Roast tenderloin @ 425 degrees until internal temperature at the thickest part reads 125 degrees (approximately 30 minutes).
Serving Size: Makes 20 servings @ 1/4 slices.
