Refried beans, ROSARITA, refried beans, traditional, 2 cup
Green Peppers (bell peppers), 0.5 cup, chopped
Onions, raw, .5 cup, chopped
*Rotel Diced Tomatoes w Lime Juice & Cilantro (2.5 servings in 10oz can), 2.5 serving
*Hatch Enchilada Sauce Fire Roasted Tomato, 2 cup
La Tortilla Factory, Large Original Low Carb Tortilla, 4 serving
*McCormick Original Taco Seasoning, 36 gram(s)
*Food Club Finely Shredded Mexican Cheese, 3 cup
Tips
You could always lessen the calories by using less cheese but I love cheese and it's still only 432.5 calories per serving so I think you can have your cheese and it's still decent calories for dinner.
Directions
take a 9x13 glass pan and spread the bottom with some enchilada sauce dip the four tortillas in sauce until covered on both sides. set aside.
Brown ground beef with onions and bell peppers, add taco seasoning but leave out the water it calls for on the package instead add in the can of rotel undrained , the can of enchilada sauce and the refried beans. Bring to a boil and then simmer for 5 minutes. Take two of the tortillas and place in pan, put half of the beef and bean mixture and spread on top then 1/2 the cheese and put on top of that repeat again ending with the cheese on top. Bake in 400 degree oven for 20-25 minutes. Let cool. Makes 8 servings.
