    12 Large Eggs

    1/2 tea spoon salt

    1/4 tea spoon black pepper

    1 small onion chopped

    1 clove of garlic minced ( I used 3 )

    1/4 cup chopped green pepper ( I added )

    2 Table Spoons of fresh chopped Herbs, such as parsley,thyme, rosemary, chives.......etc.


Oven Temp. 350 Makes 12 Bake approx. 30 min or until knife when inserted comes out clean.


Add Eggs, Salt, Pepper in Mixing bowl.......

in small skillet add, 3 Tb. spoons of Olive oil & heat.

To hot oil add Green pepper, garlic, & onion....saute'

Cool, & add to egg mixture....Add Herbs.....Mix..

Using a 12 hole Muffin pan ... spray with non-stick cooking spray.......Pour Egg Mixture evenly into each Muffin hole in pan................Bake at 350 for approx. 30 min.
