Introduction

Use only organic corn meal of high quality, and READ labels closely to make sure everything is wheat free. Use only organic corn meal of high quality, and READ labels closely to make sure everything is wheat free.

Ingredients

    Corn Meal,organic whole grain, 3 cup
    Buttermilk, lowfat, 3 cup
    Egg, fresh, 4 extra large
    Baking Soda, 2 tsp
    Baking Powder, 1 tsp
    bacon grease, 1/4 cup

Tips

makes 8" skillet, 3 large muffins, + 7 corn sticks.


Directions

Preheat oven to 400. Melt recipe (and additional) bacon grease in pans, brush over all surfaces.
Stir dry ingredients together. Mix eggs, buttermilk together. Combine. Stir until mixed; add melted bacon grease. Stir until well combined and foamy. Scoop into tins. Bake until golden and crispy on top.
12-27 minutes.

Serving Size: About 20 = one sticks, or 1/2 big muffin, or 1/8 skillet wedge
