    1/2 Red Bell Pepper
    3/4 Cup Yellow Squash
    1/2 Medium zucchini w/skin,
    9 Srouts -Green Giant FRESH Brussel Sprouts
    3/4 Cup Mushrooms, fresh, pieces or slices
    1/4 tsp Sea Salt, Redmond All Natural Sea Salt
    1/4 black pepper, coarse or cracked or ground
    4 tbsp Spectrum Organic Coconut Oil, refined expeller


this provides very well done roasted vegetables, reduce cooking time for less doneness.


Pre Heat oven to 400 degrees
Clean and cut up vegetables into small bite size pieces
(this batch yields approx 4 cups chopped veggies)
add in 4 tbsp Organic Coconut oil, sea salt and fresh ground pepper to taste
Toss all together

Spread vegetable mixture over 1 or 2 baking sheets and bake in oven at 400 degrees for 30-40 minutes, stirring/flipping about halfway through
