    1 1/2 pound mushrooms, wiped clean
    4 1/2 cups chicken stock
    2 medium onions
    1/4 tsp. dried thyme
    1/2 tsp. salt
    1/2 tsp. black pepper
    1/4 tsp. cayenne pepper
    1/2 tsp. turmeric
    1/4 cup whol wheat flour
    1/2 cup cornstarch
    4 1/2 cups 1% milk


Preheat pot on stove. Spray generously with cooking spray. Wipe mushrooms clean and slice and add to pot.
Chop onion and add to mushrooms, add spices except for salt. Cook until softened about 10 minutes.
After 10 minutes add 1 cup of chicken broth to blender and half of the mushroom mixture Puree, repeat with remaining mushrooms using 1 cup of broth per batch.
Add flour and margarine to pot an cook for about 1 minute. Add 1 cup of chicken broth and stir until flour is well blended.
Add mushroom mixture and stir until combined. Add remining broth. Stir cornstarch and 1/2 cup milk until smooth.
Bring soup to a simmer and add cornstarch mixture. Stir in remaining milk and simmer an additional 10-15 minutes.

Serving Size: Makes 10 1 cup servings
