Simple stuffed pepper recipe. Simple stuffed pepper recipe.

    6 Yellow Peppers (can also use red, orange or green)
    1 can Chickpeas (garbanzo beans)
    1 can black beans
    1 lb of ground turkey
    1/2 cup Mozzarella Cheese
    3 tsp Garlic
    1 tbsp Oregano


Pre-heat oven to 350 F.

Brown Turkey. Add Chickpeas and black beans to turkey to heat.

Cut off tops of peppers and brush with oil. Stuff with turkey and bean mixture. Cook for 35 minutes. Top with cheese and cook for another 5 minutes.
