    Oatmeal Raisin Cookies (from the Engine 2 Diet book)

    You will need:

    1 cup unsweetened applesauce

    2 TBSP ground flaxseed meal mixed with 1/4 cup water (I used Barleanís Forti-Flax)

    1/2 cup raw sugar

    1 TBSP Ener-G egg replacer (**I didnít have this, so I used a chia egg: 3 TBSP water + 1 TBSP chia seed, allow to sit for 15 min.)

    1 tsp vanilla extract

    1 1/2 cups whole wheat pastry flour

    1 tsp ground cinnamon

    1/4 tsp ground nutmeg

    1 tsp sea salt

    1 tsp baking soda

    3 cups rolled oats

    1 cup raisins

    No chocolate chips


    Preheat oven to 375 degrees. Combine the applesauce, flaxseed mixture, and the sugars with an electric mixer. Mix in the chia egg (or ener-g egg replacer) and vanilla extract.

    In a separate bowl, combine the flour, spices, salt, and baking soda. Gradually mix the dry and wet ingredients until well-combined.

    Stir in the oats and the raisins

    Place rounded, heaping tablespoons of dough onto a sprayed cookie sheet, or use parchment paper.

    Bake for 10-12 minutes and allow the cookies to cool.
