Ingredients

    8 oz orzo
    1 cup shredded mozzarella or cheddar cheese
    1 tomato - diced
    1 small onion - diced
    1/4 cup chopped basil, chives and parsley
    1/2 cup plain yogurt
    2 tbs olive oil
    4 medium-large bell peppers, washed and halved

Directions

heat over to 375. Cook orzo according to instructions. Drain and toss with a bit of olive oil.

Combine ingredients except peppers and salt and pepper to taste.

Placed on an oiled pan and cover. Cook for 30 minutes. Uncover and cook for an additional 5-10 minutes.
