Ingredients

    1 Whole Wheat Tortilla
    1 Egg
    1 Egg White
    1/2 oz. Reduced Fat Feta
    1 Large leaf Lettuce ( I calculated using Bibb)
    3 Cherry Tomatoes ( sliced into 3rds )
    1 TBSP Hummus ( I used Roasted Red Pepper)
    1 tsp Freshly Ground Black Pepper
    1/2 tsp Garlic Powder ( fresh garlic can also be used, 1/2 clove, minced )
    1/2 tsp Onion Powder
    1 tsp Dill Weed ( Optional )
    Pinch of Cayenne ( Optional )

Tips

I like to just let the eggs sit in the skillet without turning them, it creates an omlette which fits into the tortilla easier and then the pieces of egg don't fall all over my plate.
I really like the taste of dill, especially with feta so I always add some!
I am also a hot pepper fanatic, so I add cayenne to just about everything. Obviously, if you don't like it, or can't eat it-- dont!


Directions

Scramble egg and egg white. Add desired seasonings to eggs. When cooked, remove pan from burner and swipe tortilla over burner, both sides, to warm. (Alternatively, a microwave or another hot skillet can be used to warm tortillas, but in my home, this is how we've always done it. Plus I like the little browned spots!) Smear hummus around on tortilla, place tomatoes on tortilla. Add lettuce, feta and eggs. Wrap and go!
