    4 Hardboiled Eggs (discard 3 yolks), finely chopped
    1 Tbsp Milk, or fat free Ranch
    Squirt of Mustard
    a few drops vinegar
    Salt and Pepper to taste
    Lettuce leaves (or make a tossed salad for your veggies), optional
