    1tbsp butter or margarine
    1 cup diced carrots
    1/4 cup chopped onion
    1/4 cup cubed potatoes
    2 cups chicken or veggie broth
    1/2 teaspoon ginger
    2 1/2 tablespoon dill
    1/4 cup light coconut milk

    Add cayenne if you want a bit of kick.

    Melt butter in pot, sweat carrots ginger and onions. Add potatoes and broth. Reduce heat and simmer until tender. Strain liquid into separate container. Put veggies into blender, along with dill, pour enough broth to cover veggies. Purée. Add broth until desired level of thickness. Stir in coconut milk, season with salt and pepper and serve.
