Ingredients

    Baked boneless, skinless chicken breasts
    Olive oil
    onions
    yellow summer squash
    zucchini
    green beans, fresh, snapped to spoon sized bites
    celery
    red and yellow bell peppers
    jalapeno pepper
    garlic
    fresh salsa (not jarred)
    1 14-oz can tomato sauce
    1 14-oz can diced tomatoes
    cilantro
    parsley
    chili powder
    cumin
    Chicken broth - to desired consistency

Directions

Bake chicken until tender. Dice all the fresh vegetables - saute in a large pot with the olive oil - add garlic near the end. Add herbs, tomato sauce, canned diced tomatoes, fresh salsa (if you have it), chili powder, cumin, and other spices, as well as diced baked chicken. Let simmer for 20 minutes. Serve hot.
