    2 tbsp Avocado (or Extra Virgin Olive Oil)
    1 Fennel Bulb (~7 cups chopped up)
    1 cup chopped Medium White Onion
    1/2 cup Half & Half or unsweetened Almond Milk
    3/4 cup Greek Sour Cream
    4 tbsp Parmesan Grated Cheese
    1/2 cup Nacho Cheese
    1 cup Sweet Red Pepper (chopped)


Serving Size: Makes 4 servings

Caramilize onion, pepper and fennel in the Avocado Oil. Mix in the Almond Milk and Greek Sour Cream.

Transfer to an oven proof dish. Level out and sprinkle the parmesan then the Nacho cheese on top. Brown under the broiler.
