    6 C cubed peeled potatoes
    2 medium onions, chopped
    4 garlic cloves, minced
    4 C reduced-sodium chicken broth
    3 1/2 C water
    1 tsp pepper
    1 tsp salt
    2 packages frozen broccoli florets
    6 Tbsp all-purpose flour
    2/3 C fat-free milk
    2 C shredded sharp cheddar cheese


In a large saucepan, combine the first seven ingredients; bring to a boil. Reduce heat; simmer, covered, for 10-15 minutes or until potatoes are tender. Stir in broccoli; return to a boil. In a small bowl, whisk flour and milk until smooth; stir into soup. Stir in cheese. Cook and stir for 2 minutes or more; until thickened. Remove from heat; cool slightly. Process in batches in a blender, or use an immersion blender, until smooth. Return to pan; heat through. If you want, garnish with a little parsley and shredded cheese.
