    2 tbs extra virgin olive oil
    1 eggplant
    2 cups spinach (fresh)
    1 can delmonte traditional spaghetti sauce
    1 clove garlic
    1/2 of a med onion diced
    1/2 cup bell pepper diced


Mushrooms would make a great addition! This is something I just came up with based on what I had. Top with parmesean cheese if desired.


Saute onions, bell pepper, and diced garlic in olive oil until onions are translucent. slice eggplant 1/4in put in a lightly greased baking dish, add spinach, sauteed veggies,and spaghetti sauce. Bake at 350 for 30 min or until bubbly.
