Number of Servings: 8


    1.5 lbs extra lean ground beef
    1 c. dry bread crumbs
    1 tsp. salt
    1/4 tsp. pepper
    2 eggs
    1 tsp. minced onion
    8 oz. tomato sauce

    6 tsp. (2 tbsp.) brown sugar
    8 oz. tomato sauce
    2 tbsp. vinegar
    1/2 c. sugar
    2 tsp. mustard


I use a baking dish instead of a loaf pan to allow for room to pour topping over meatloaf.


Mix together beef, crumbs, salt, pepper and eggs. Add minced onion and tomato sauce. Form into loaf and place in pan sprayed with cooking spray. Bake for 60 minutes.

Meanwhile in saucepan, combine topping ingredients and bring to a boil. After meatloaf has baked for 60 minutes, pour the topping over the meatloaf and bake for another 10 minutes.
