    Pinto Beans 5 cups
    Spinach 1 can
    Onion med diced
    Celery 1 stalk cut small
    Ham l thick slice diced
    Garlic 4 tsp
    Black pepper 1 tbs.
    Rotel tomatos, one can regular
    Salt, to taste


Mix all ingredients into a large pot with 5 qt. of water, bring to a rolling boil for 30 min. Add water if necessary and lower to simmer an hour.
This can sit on very low all day if started early. Just add water if necessary.
Ps. This is high in sodium for sodium watchers. But an excellent low carb filling soup for the carb watcher. Add it to any meat dish as a side or eat it as your main meal.
