A favourite muffin (originally Alison Holst). But I have adapted it a little! Super yummy! A favourite muffin (originally Alison Holst). But I have adapted it a little! Super yummy!
Number of Servings: 10


    1.5 cups flour
    2 tsps baking powder or baking soda
    dash of sea-salt
    dash of ground black pepper
    1/2 cup Splenda
    1 tbsp diced fresh chives (or dried chives)

    2 cups grated Edam cheese
    1 cup milk
    1 medium fresh egg


1. Preheat the oven to 210C.
2. Sift dry ingredients together
3. Add grated cheese and mix through with fingers.
4. Mix egg and milk together. Then pour in with other ingredients, mixing together. Take care not to over-mix.
5. Spoon a hefty tbsp of mixture into each muffin case.
6. Bake for 10-12 minutes, or until golden on top (and muffin springs back when pressed in the middle).
7. Let sit for a minute or so, and then turn out onto a cooling rack.
8. Enjoy!
