    1 lb of cooked chicken breast meat.
    1 cup chopped onion
    1 1/2 cups diced bell pepper
    3 cans Rotel
    Juice of one lime
    1 tsp oregano
    2 tsp cumin
    1 TBLS Garlic Powder
    2 cups water


Usually this soup is served with grated jack cheese an taco chips. I leave these out here to make this a healthy version of my favorite soup.


Saute onions and peppers in 1 tsp olive oil. Add salt, pepper, oregano, cumin, and garlic powder. Then add 3 cans Rotel, Chicken Stock, and Water. Add Lime juice and simmer for 30 minutes. Shred chicken meat and add the last 5 minutes of cooking.

Serving Size: Makes 10 1.5 cup servings
