Ingredients

    1 head cauliflower
    1 cup chicken broth (plus some more if you need it)
    3 oz. garlic & herb Boursin cheese
    1/4 cup grated parmesan cheese

Tips

Don't rely as much on the cooking time as on cooking it until it will mash.


Directions

Cut leaves and core out of cauliflower.
Place whole cauliflower head in a deep pot with 1 cup of chicken broth.
Bring to a boil and steam for 8-10 minutes (adding more chicken broth if necessary not to burn the pot).
When soft, take off the heat and mash with a potato masher.
Add cheese and mix well over low heat while cooking off any excess liquid.
