Nina's Empanadas Nina's Empanadas

    *Pie crust, standard-type, frozen, ready-to-bake, unenriched, 1 crust, single 9"
    Beans, pinto, .5 cup
    Yellow Sweet Corn, Frozen, 0.5 cup kernels
    Cheddar Cheese, 3 oz
    Onions, raw, 1 slice, medium (1/8" thick)


Preheat oven to 375.

Mix cheese, beans, onion, and corn in a bowl. Add seasoning to taste (salt, pepper, cumin, chili powder, etc.).
Set aside.

Roll out dough.
Use cup/glass to cut out 8 circles from the dough.
Use a spoon to place filling onto each circle.
Fold each circle in half and press with a fork to seal (a TINY bit of water around the edge can help to seal).

Bake at 375 for 10 mins on each side (20 mins total)
