Ingredients

1 cup dry elbow noodles - boiled
1 bag (approx 3 cups) frozen cauliflower - boiled til soft
1/2 small onion chopped - saute until soft
2 oz cabot 75% RF Cheddar - grated
1 Tbsp grated parmesan
2 Tbsp FF greek yogurt
15 Special K Pototoe Crisps crushed (plain or cheddar)
Directions
Boil Elbow noodles & cauliflower (separately) until soft.
Drain both. While boiling saute chopped onion in pan sprayed with cooking spray until soft.
Using a hand blender or food processor puree cauliflower until smooth adding a dash of chicken stock to thin. Add in yogurt, salt, pepper, onion, parmesan & cheddar cheese. stir unil cheese is melted and well combined. Stir in drained elbow noodles.
Spread into an 8x8 baking dish sprayed with cooking spray. Top with crushed chips.
Bake 30 minutes at 350 or until bubbly.
