    1 15.25 oz can of Reduced Sodium Black Beans
    1 cup cooked of Instant Brown Rice
    1 3.5 oz pkg of reduced fat feta cheese
    3 cups chopped tomatoes
    1 cup chopped celery
    1 cup chopped red onion or green onion

    3 Tablespoons of Olive Oil
    3 Tablespoons of Stivia or Splenda
    4 1/2 Tablespoons of Cider Vinegar
    2 Tablespoons of Garlic Powder
    2 Tablespoons of Parlsey


I make this as a meal in the hot summertime. 1.25 cups will give you 15 grams of protein. I will also add an additional can of beans on occasion for even more protein/fiber punch


Cook instant brown rice to make 1 cup cooked. Let cool.
Rinse and drain black beans
Chop tomatoes. About 3 large = 3 cups
Chop celery. About 3 large stalks equals one cup
Chop onion. Combine all ingredients in a bowl.

Blend all dressing ingredients in a bowl. Wisk until smooth. Pour over bean/rice mixture and stir until coated. Let chill at least one hour before serving.

Serving Size: Makes 8-1 cup servings
