    Juice of 1 lemon
    1 tbsp curry powder
    1.5 tbsp olive oil
    1tsp salt
    1tsp cumin
    6 garlic cloves - minced
    2lb boneless skinless chicken breast - cut into bite
    size pieces

    4c bell peppers, sliced
    2c onion, sliced
    1 can chickpeas (or other beans)
    2pkg mushrooms, sliced

    2tbsp hummus/plate (Sabra classic)
    1/2 of a flatbread or pita/plate


Combine lemon juice through garlic and marinate chicken for at least 20 min or as long as overnight.

Grill chicken off or pan fry.

Saute vegetables and mushrooms to desired doneness (I like the peppers crisp).

Place hummus in a bowl and top with 1/8 of the vegetable mixture and 1/8 of the chicken. Use the flat bread to help scoop!
