Introduction

Ingredients

    4 bell peppers, seeded and ribs removed
    2 cups cooked brown rice
    1 cup low sodium chicken or vegetable broth
    1/2 cup taco cheese
    1 can no salt added diced tomatoes
    1/2 tsp cumin
    1 tsp chili powder
    1 tsp paprika
    1/2 tsp cayenne pepper
    1 can low sodium black beans
    1 can no salt added sweet corn
    1 egg white
    hot sauce to taste

Directions

Combine cooked rice, spices, beans, corn, hot sauce, cheese and egg in a bowl. Mix thoroughly.

Stuff each pepper, packing tightly. You may round the filling slightly over the top.

Place each pepper in the crockpot. Top with diced tomatoes.

Pour the cup of broth around the bottom of the peppers.

Cover and cook on low for 6-8 hours.

Serving Size: Makes 4 stuffed peppers
