Ingredients

    1 1/2 c. Bran
    1 c. buttermilk
    1/3 c. oil
    1 egg
    2/3 c. brown sugar

    1/2 c. raisins or dates

    1/2 tsp. vanilla
    1 tsp. baking soda
    1 tsp. baking powder
    1.2 tsp. salt
    1 c. whole wheat flour

Directions

1. soak bran and buttermilk and let sit together while beating eggs, oil, sugar and vanilla together.
2.Mix with bran mixture.
3. Sift dry ingredients together then add to wet mixture.
4. Add dates or raisins.
5. Grease 12 cup muffin tin and fill 1/2 to 2/3 full.
6. Bake at 400F for 15-20 minutes
