Extra ginger to combat sickness. Extra ginger to combat sickness.
Number of Servings: 4


    Carrots, raw, 6 medium, in slices
    Onions, raw, 0.5 medium, chopped
    Garlic, 3 cloves
    Ginger Root, 0.25 cup chopped
    chicken broth - fat free & low sodium, 4 Cups
    Olive Oil, 0.5 tbsp
    Hot water as needed


Turn oven to 400F. Place carrots, garlic cloves, and onions on baking sheet, toss with olive oil and salt and pepper. Bake for about 40 minutes, until tender and slightly charred. Stir every 15 or so minutes.

Chop ginger. In big sauce pan, combine ginger and broth. Simmer.

When veggies are out of oven, put in sauce pan with broth and ginger, bring to boil and then simmer until everything is soft.

Puree (hand blender, blender, food processor... worst case scenario a potato masher...) and serve.

Serving Size: Makes 4 1-2Cup servings
