    1 boneless skinless chicken breast (3/4 lb.), poached
    1 carrot, thinly sliced
    1 celery stalk, sliced
    1/3 C. diced onion
    5 C. water
    4 t. Knorr chicken bouillon (2 2-cup cubes)
    1 T. parsley flakes


I buy a bag of frozen chicken breasts and poach them for 35 minutes in chicken broth or water with bouillon cubes. Then the chicken is ready in the fridge for snacking or for using in various recipes calling for chicken. So handy and delicious.


Mix all ingredients together (except noodles) and simmer covered till vegetables are tender. Meanwhile, cook noodles according to package directions, adding 2 bouillon cubes to the cooking water (or 2 t. salt). Drain noodles and add to soup mixture, cooking two or three minutes more.
