Ingredients

    quinoa
    roasted peppers
    garlic
    parmesan cheese
    egg whites
    salt
    water
    fresh basil

Tips

serve like meatballs!


Directions

cook quinoa in water and allow to cool slightly.
finely mince basil, peppers and garlic.
mix into quinoa, along with cheese.
season with salt to taste before adding egg whites.
scoop into mini muffin pan with a tablespoon.
bake about 20 minutes until slightly browned, flipping in muffin pan after 15 minutes.

Serving Size: makes 12 tablespoon-sized balls (6 per serving)
