Ingredients

    Mission Yellow Corn Tortillas
    California Grown Brown Rice
    2% Milk Reduced-fat, Mexican four cheese
    Eden Organic Kidney Beans
    Summer Crisp Golden Sweet Corn
    Cheese, Philadelphia Reduced Fat Cream Cheese
    Green Chiles (Chopped)
    Old El Paso Mild Green Chile Enchilada Sauce
    Pam Olive Oil Cooking Spray

Tips

Makes two enchiladas per serving.


Directions

Preheat oven to 350 degrees.If the chiles are not already chopped, chop into quarter inch pieces . Mix chiles into a bowl with cheese, beans, corn, and cream cheese. Set mixture to side. Heat tortilla in pan with Pam.Dip hot tortilla into green enchilada sauce. Stuff tortilla with the chile, cream cheese, beans, cheese, and corn mixture. Pour extra sauce over tortillas in the pan. Heat for 30 minutes and serve.
