    3 lbs. Boneless, skinless chicken breasts
    18 corn tortillas, medium
    1 large can green enchilada sauce mild ( will have a little extra left over)
    1 small can green enchilada sauce medium
    4 cups reduced fat mexican cheese
    1 medium onion
    1 can chopped green chilies
    1 can southwestern style corn


If you have some inch room. You can try (and/or) sliceded olives, light sour cream, diced tomatoes and slices of avocado on top.


Boil chicken breasts in water until done.
Drain & cut into small pieces.
Preheat oven to 350 degrees.
Dice onion.
Spray 13x9 pan with non stick cooking spray.
Dip approx. 6 tortillas in green sauce and cover bottom of pan.
Spread half of all ingredients except cheese over the tortilla layer.
Then spread 1/3 cup of the cheese.
Repeat steps with second layer of dipped tortillas and ingredients.
Dip the last 6 tortillas and layer.
Spread the remaining cheese across the top casserole.
Bake uncovered for 30-45 minutes, until cheese is melted and casserole heated all the way through.
