Chicken Salad with Flair
IntroductionNot just another chicken salad! Not just another chicken salad!
2 chicken thighs, cooked in a slow cooker then shredded
2 carrots, diced
3 celery stalks, sliced
1 large head of broccoli, diced
1 handful of baby spinach
1 handful of grapes, quartered
2 apples, diced
1 bunch parsley, chopped
1 green bellpepper, diced
1 head lettuce, chopped
1/2 head cabbage, chopped
1/2 cup mayonnaise
To make the 'dressing' a little thinner to help coat everything well, add a few tbsp of lemon juice. As well, this is a great recipe to play with- remove ingredients you don't like, add some you do (turnips maybe?) just be sure you chop and dice everything fairly small so that when you take a bite you're getting a little of this and a little of that.
Also, please note, I am NO good at determining serving size. This fed my family of 7- 2 adults and 5 kids- but we all eat a bit different size servings. I figured 6 was a good number to use if it's mostly adults eating.
