    500g parsnips, 2 onions, 2 sticks celery, 2 carrots, tbsp olive oil, 5 tsp minced ginger, 2 veg OXo cubes, 1.5 litres water, chopped fresh coriander


Peel & chop all the vegetables, heat the oil, sweat the veg for five minutes, add the stock cubes dissolved in hot water and simmer for about half an hour till tender. Liquidise, add the ginger and serve garnished with chopped coriander.
